The Vision Behind eyesandhour

Anthony Bourdain once said, "If I had to eat only in one city for the rest of my life, Tokyo would be it." For me, Tokyo has been that city—a place where food is more than sustenance; it’s a bridge to connection.

Bourdain taught me that food isn’t just about what we eat—it’s about where we are, who we’re with, and the stories that unfold with every bite.

In Japan, dining is an experience shaped by centuries of tradition and constant reinvention. From the refined kappo cuisine of the Edo period to avant-garde dishes redefining the future, every meal is a journey. Whether gathered around a midnight ramen stall or savoring a meticulously crafted kaiseki course, Japanese food reminds us that meals are more than taste—they are shared pleasure, discovery, and a connection to culture and people.

Yet, in a world more connected than ever, we’ve also never been more disconnected. Loneliness is a quiet epidemic, and real human connection is slipping away. But I believe food has the power to bring us back together.

When I moved to Japan, my journey was one of growth, discovery, and at times, profound loneliness. After the March 11 earthquake, I found myself dining out every night—not just for the food, but to be surrounded by others. The counter table became more than just a place to eat; it became a space for connection. Those moments anchored me, reminding me that food is not just nourishment—it’s community.

This belief is the foundation of eyesandhour. More than a blog, it’s about exploring Japanese food beyond the surface—diving into the stories, techniques, and traditions that make it extraordinary. But it’s also about something bigger: transformation. It’s about pursuing what excites you, embracing imperfection, and creating a life that aligns with your values.

Through eyesandhour, I want to cultivate a community that connects through food and a way of living that is intentional, joyful, and deeply satisfying. I refuse to live an ordinary life, and if you’re here, I imagine you don’t either.
