Yuzu Salad Dressing

This bright and citrusy yuzu dressing is smooth, balanced, and perfect for salads, grain bowls, tofu, or roasted vegetables. It mixes up in minutes and keeps well in the fridge.

- 4 tablespoon yuzu juice bottled is fine (¼ cup)
- 4 teaspoon rice vinegar
- 2 teaspoon soy sauce
- 8 tablespoon olive oil or neutral oil (½ cup)
- 4 teaspoon honey or maple syrup
- 1 teaspoon grated fresh ginger
- ½ teaspoon salt (start with ¼ and adjust to taste)
- ½ teaspoon black pepper (or to taste)
Combine ingredientsIn a small bowl or jar, whisk together the yuzu juice, rice vinegar, soy sauce, honey (or maple syrup), and grated ginger until well combined. Yuzu Juice
Bottled yuzu juice works perfectly in this dressing. Fresh yuzu is wonderful but often hard to find and pricey, so bottled is the easiest option. Each brand tastes a little different. If your dressing feels too sharp, add a little more honey or oil to balance it.
Oil Choice
A neutral oil lets the yuzu flavor shine. I often choose grapeseed or canola. If you prefer olive oil, reach for a light one because stronger olive oils can overpower the delicate citrus.
Sweetener
Honey gives the dressing a bright and clean sweetness. Maple syrup creates a deeper and cozier flavor. Either one works well. Adjust the amount depending on how tart your yuzu juice is.
Ginger
Fresh ginger adds a gentle warmth that really lifts the dressing. If you use ginger from a tube, start with a small amount and taste as you go because it is usually stronger than fresh.
Salt and Soy Sauce
Soy sauce already adds saltiness and umami. Add the extra salt little by little and adjust to your taste.
