Ingredients

  • 2 tablespoon yuzu juice
  • 2 teaspoon honey or simple syrup (plus more to taste)
  • ice cubes
  • 1 cup sparkling water

Instructions

  • Mix the yuzu and honey. Add the yuzu juice and honey (or simple syrup) to a tall glass. Stir until the honey has completely dissolved.
  • Add the ice. Fill the glass about three-quarters full with ice.
  • Pour in the sparkling water. Slowly pour the sparkling water over the ice to preserve the bubbles.
  • Stir gently. Give the mocktail one or two gentle stirs to combine the ingredients without losing the fizz.
  • Garnish and serve. Garnish with a sprig of fresh mint and a slice of yuzu or lemon. Serve immediately while cold and bubbly.

Notes

  • Chill the yuzu juice and sparkling water before mixing for the best flavor.
  • I recommend starting with 2 teaspoons of honey so the bright flavor of the yuzu can shine. Add more to taste if you prefer a sweeter drink.
  • Add the sparkling water just before serving to keep the mocktail fizzy.
